We’ve all heard of maple syrup, which is commonly poured over pancakes and is prepared by boiling the sap of maple trees to create a thick, sweet syrup with a golden to brown hue.
The fact that you can drink the sap itself—known as maple water—is far less generally recognized. It is clear and very mildly sweet because to its 2% natural sugar content.
After filtering and pasteurizing it to remove any bacteria, a few but increasing producers in Canada are now offering this maple water in bottles or cartons.
