Fisher will play fellow Brit Dave Allen, while Itauma will play Australian Demsey McKean.
Itauma and Fisher, who have both gone unbeaten in their professional lives, are seen as the next big thing in heavyweight boxing.
Dennis McCann, who competes in an exciting super-bantamweight match against Liverpudlian Peter McGrail, is also on the undercard.
While McGrail has only suffered one defeat in his 11 fights, McCann has won 17 of them.
Fisher, 25, will face 32-year-old Allen, a seasoned pro with 23 wins, 2 draws, and 6 losses in his career.
Fisher, who has won 12 fights with 11 knockouts, and Itauma, 19, both want to improve their stoppage record.
Itauma has won eight of his ten fights via knockout, and McKean marks a significant improvement in caliber for the young fighter.
In 23 fights, the southpaw has only suffered one loss, to Filip Hrgovic last year.
After losing their uncontested match in May, Fury is out for retribution against Usyk to win the heavyweight world championship three times.
